Irresistible Irish Soda Bread

 
"A very easy, very good tasting bread. Best if made the day before, or several hours before serving."
Original recipe yield: 1 - 9x5 inch loaf.

INGREDIENTS:

3 cups all-purpose flour

1 tablespoon baking powder

1/3 cup white sugar

1 teaspoon salt 

1 teaspoon baking soda

1 egg, lightly beaten

2 cups buttermilk

1/4 cup butter, melted


DIRECTIONS:

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
  2. Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
  3. Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Guinness Beer Bread

3 cups self rising flour

3 tablespoons sugar

1 Guinness

Preheat oven to 350 and mix all ingredients in a bowl.  Grease a bread loaf pan and add ingredients.  Cook for 1 hour at 350.  Enjoy!

Stout Brownies

8 ounces bittersweet chocolate

4 ounces white chocolate

3/4 cup sugar

6 tablespoons butter

3/4 cup of flour

4 large eggs

3/4 cup cocoa powder

10 ounces of Guinness Extra Stout

Beet the eggs and sugar in a bowl.

Melt the chocolates and butter together in a saucepan over low heat, while you drink the last 2 ounces of stout in the bottle.  Let cool.  Add to egg/sugar mixture.

Stir in stout, flour and cocoa and whisk till smooth.  Batter will be fairly thin.  Pour into a greased 8X8 baking pan.

Bake at 375 for 25 minutes.  Insert toothpick into center of pan, it should come out clean or with a few crumbs adhering.  Cool and eat one sitting thereby giving new meaning to the name "stout brownies" or resist the temptation and cut into squares.

Baker's Note: Baking time will vary with elevation.  A slightly cooler oven and extended baking time will yeild excellent results.

Mangos & Irish Cream Salsa
1 can mango nectar
1 ripe mango
1/8 cup of Baileys
Chop mango
Add to Sofrito
Add nectar
Add Baileys
Sofrito-Blend all items (2 elephant garlic cloves, 1 white onion, bunch of cilantro, 1 cup tomato sauce and 2 jalepenos)
Aussie Meatloaf w/ Guinness Sauce

Ingredients for loaf:

1 pound ground beef

1 cup bread crumbs

1 onion

1 tablespoon curry powder

1/4 cup Guinness

1 tablespoon cilantro

1 egg beaten

1/2 cup clove

Mix ingredients for loaf a little at a time until smooth but firm.  Shape into loaf and put into greased baking pan.  Bake 30 minutes at 375.

Ingredients for sauce:

1 onion

1 can of Guinness

1/2 cup ketchup

1/4 cup dry red wine

1/4 cup Worcestershire sauce

2 tablespoons vinegar

1 tablespoon instant coffee

1/4 cup brown sugar

1 ounce margarine

lemon

Saute onions in margarine and add all other ingredients.  Bring to a boil, lower heat and simmer 10-15 minutes.  After loaf has cooked for 30 minutes, pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting with remaining sauce.  Serve loaf hot in think slices with remaining sauce.
